MARGARITAVILLE SALAD AN ISLAND STYLE SALAD

INGREDIENTS: SALAD
| 12ea | Tequila Marinated Shrimp |
| 2lbs | Lemon-Lime Marinated Flank Steak |
| 1bn | Arugula |
| 1bn | Water cress |
| 1head | Frisee lettuce |
| 1/4c | Roasted Pistachio |
| 6ea | Strawberries sliced |
| 1/4c | Feta crumbles (if you like blue cheese you can substitute) |
| 1/2c | Halved heirloom cherry tomatoes |
| 1ea | Lemon-Lime zested |
INGREDIENTS: TEQUILA MARINADE
| 2oz | Tequila |
| 2oz | Honey |
| 2oz | Champagne vinegar |
| 1tsp | Chopped shallots |
| 2oz | Olive Oil |
INGREDIENTS: LEMON-Lime MARINADE
| 2oz | Lemon juice |
| 2oz | Lime juice |
| 1T | Shallots (diced) |
| 1T | Cilantro (fine chopped) |
| 2T | Honey |
INGREDIENTS: LEMON-Lime EMULSION (DRESSING)
| 2ea | Lime juiced |
| 2ea | Lemmon juiced |
| 2ea | Orange juiced |
| 2oz | Honey |
| 1/2c | Champagne vinegar |
| 1/2c | Sour cream or creme Fraiche |
| 1T | Shallots |
| 2 1/2 - 3c | Salad oil |
| to taste | Salt and white pepper |
PROCEDURE:
- Marinate your shrimp and meat for 2 hours then grill off to your likening. Make sure you slice the flank steak thin it gets a bit chewy if the slices are too thick.
- Arrange your salad and toppings along with your proteins.
- Dress with your dressing.
