FRENCH ONION SOUP

This is our all time favorite soup, It is so simple, yet so decadent, it is an old classic that is perfect for this cold New England Weather.
INGREDIENTS: SOUP
| 5ea | Yellow onions skin removed and sliced |
| 4T | Unsalted butter |
| 2T | Olive oil |
| 3qt | Beef stock |
| Fresh cracked black pepper | |
| Sherry wine | |
| Chopped fresh thyme |
INGREDIENTS: CROUTONS
| 1ea | Baguette |
| Melted butter | |
| Grated parmesan | |
| Garlic | |
| Fresh chopped parsley |
INGREDIENTS: FINISH
| 2slices | Swiss |
| 2slices | Gruyere |
| Grated parmesan |
PROCEDURE:
- Peel onion and slice.
- Melt butter in heavy bottom sauté pan throw in sliced onion and caramelize on low heat until very brown, sweet and delicious, add sherry wine and flambé, reduce and add beef stock, add thyme salt and black pepper.
- For the croutons, slice the bread add butter and garlic place in 350 degree oven until golden brown, pull out and let cool.
- To finish place onion soup in bowl. Add the croutons then place the cheese and melt in oven until golden brown and delicious.
