"Sustainable Fish" - Guinness Beer Battered Black Cod and Spicy Remoulade

Ingredients: Spicy Remoulade

1 1/4c Mayonnaise
1/4c Stone-ground mustard
1ea Garlic clove, smashed
1tbs Relish
1tbs Capers
1/4tsp Cayenne pepper
1/4tsp Hot paprika
1/4tc Lemon juice
1/2tsp Hot sauce (I like Louisiana)

Procedure:

Place all ingredients into a food processor and blend until smooth. Chill until ready to serve.

Ingredients: Black Cod

2ea Large Filets Of Black Cod, skin removed cut into 2 inch strips
2c Buttermilk
2c Flour
1tsp Garlic/powders
1tsp Kosher salt
12oz GuinnessŪ Extra Stout Beer
4c Canola oil

Procedure:

Portion cod to your likening, salt and pepper then transfer to bowl and cover with buttermilk.

Combine 1 cup flour, garlic powder and salt in bowl and stir to blend.

Combine 1 cup flour and beer in bowl and whisk to blend.

Heat oil in deep heavy pan or deep fryer to 350°F.

Working in small batches; remove Black Cod (sablefish) from buttermilk and drain. Dredge in seasoned flour; shake excess. Dip in beer batter; drain excess.

Carefully lower Black Cod, one at a time, into hot oil (do not overcrowd) and deep fry until golden brown, turning during frying with tongs.

Remove from oil and drain on paper towels.

Season with high quality sea salt, if desired. Serve hot.
